Avacado Lime Soup w/ Chicken

The soups at last Saturday's Soup and Swap were delicious! Thank you to all who brought some. We'll be posting each of the recipes.

AVACADO LIME SOUP w/ Chicken- Lindsey Harman

INGREDIENTS

  • 1 1/2 tablespoons olive oil
  • 1 white onion, sliced thinly
  • 8 cloves garlic, minced
  • 4 fresh jalapeno peppers, diced. (less for less spice)
  • 2 skinless, boneless chicken breast thawed and cubed
  • 4 cups chicken broth
  • 1/4 cup fresh lime juice (or bottled)
  • 1 tomato, seeded and diced
  • salt and pepper to taste
  • 1-2 avocados - peeled, pitted and diced
  • 1/4 cup chopped fresh cilantro
  • tortilla chips
  • sour cream

DIRECTIONS

  1. In a large saucepan over medium heat, cook onion, garlic and jalapenos in olive oil until lightly browned, 4 to 5 minutes. Stir in chicken, chicken broth, lime juice, tomato, salt and pepper. Gently simmer until chicken is cooked, 3 to 5 minutes. Stir in avocado and cilantro and heat through. Adjust seasonings.
  2. Ladle soup into bowls and sprinkle with tortilla chips and sour cream to serve.
You can add more ingredients, i.e. corn, beans, mushrooms, rice, carrots to make it more of a meal.
