Cheddar Corn Chowder

Recipe from Kimberly Hubble

2 cups boiling water
2 cups diced potatoes
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup chopped onion
1 cup cheddar cheese, grated
1 17 oz. can creamed corn
1 1/2 t salt
1/2 t pepper
1/4 cup butter
1/4 cup flour
2 cups milk

Add water to potatoes, carrots, celery, onion, salt and pepper. Simmer 10-20 minutes. DO NOT drain. Make white sauce of butter, flour, and milk. Add cheese, stirring until melted. Add corn and undrained vegetables. Heat. Do not boil. Serves 6.
